This is my husband’s favorite appetizer dish. It’s made with plenty of fresh ingredients, fresh cilantro, red peppers, green peppers, red onions, black beans, black eye peas, jalapeño peppers and fresh corn. This fresh and simple dip can be thrown together in the spur of the moment, which makes it a quick side dish for any celebration!

INGREDIENTS:
1/2cupof sliced cherry tomatoes
1slightly firm avocados diced
1 15ozcan black beansrinsed and drained
1 15ozcan black eyed peasrinsed and drained
1 ½cupsfresh sweet corn
1/2bell pepperdiced
1/2red pepperdiced
⅓cupred oniondiced
1jalapeno pepperseeds removed, diced into very small pieces
1/2cupCilantrofinely chopped
DRESSING
⅓cupolive oil
2Tablespoonsred wine vinegar
2Tablespoonslime juiceuse fresh limes
1teaspoonbrown sugar
Add salt and pepper to taste
Tortilla scooped chips
Instructions
Combine tomatoes, avocado, onion, black beans, black eyed peas, corn, pepper, jalapeno pepper, and cilantro in a large bowl. Toss/stir well so that ingredients are well-combined. In a separate bowl, whisk together olive oil, lime juice, red wine vinegar, sugar, salt, and pepper. Pour dressing over other ingredients and stir/toss very well. Keep refrigerated.
