Cattle Baron’s Ball is the American Cancer Socie Cattle Baron’s Ball is the American Cancer Society’s signature event and Houston’s event is the second largest in the entire country! The money goes to research and to the Hope Lodge, which is a housing facility for people traveling to Houston for cancer treatment. The American Cancer Society is a leading cancer-fighting nonprofit organization with a vision to end cancer for everyone. Their mission is to improve the lives of people with cancer and their families through advocacy, research, and patient support, to ensure everyone has an opportunity to prevent, detect, treat, and survive cancer. As a volunteer, at the Houston Cattle Baron’s Ball, this year, I had a fun gig as a greeter! It was quite the party and a huge success for a great cause! Balsamic Dijon Chicken Recipe A recipe with bone Balsamic Dijon Chicken Recipe A recipe with boneless chicken breasts marinated in Dijon mustard and balsamic vinegar; then cook in the oven for 25-30 minutes until golden brown. It’s a winner! 4 Ingredient’s: * 1/2 cup Balsamic Vinegar * 2 tsps Dijon Mustard * 2 tsps Oregano (dried) * 1 lb Chicken Breast (boneless, skin-on Directions: * Preheat the oven to 375ºF (190ºC). Line a baking sheet with parchment paper. * Mix the balsamic vinegar, mustard, and oregano together and spread it onto the chicken. * Cook the chicken in the oven at 375ºF for 25 to 30 minutes or until cooked through. My client here in this picture with me came to me My client here in this picture with me came to me when she was just 14 years old, carrying a lot of extra weight for her small frame. At the start, she weighed 176 pounds with a body fat percentage of 45.6%. She had a long road ahead of her, but from day one, she was determined to make steady progress, no matter how difficult the journey would be. Over the course of 3.5 years, she has achieved something truly remarkable. With consistent effort, discipline, and a positive mindset, she managed to lose 30 pounds and reduce her body fat by 9%. It wasn’t always easy, balancing her weight loss goals with the pressures of school was tough, especially since her dream is to become a doctor. One of the hardest moments in her life came during the time I worked with her: the loss of her younger sister to a rare childhood disease. The grief understandably threw her off course for a while, and her focus shifted away from her own health. But, despite the overwhelming sadness, she picked herself up, dusted herself off, and reignited her commitment to living a healthier life. It wasn’t about speed or drastic changes for her—this was a slow, intentional process. She learned so much about herself during this time and gained incredible insight into what it takes to take care of her body. She admits now that her relationship with food is healthier than it’s ever been, and she no longer views her weight loss as a temporary fix. She has grown so much in these few years, not just physically, but mentally and emotionally as well. Today was a bittersweet day. It was her last appointment with me before she leaves for college. We spent some time talking about her next chapter and discussed tips for navigating healthy eating in the midst of dorm life and cafeteria food. Spicy Sweet Chicken & Veggie Recipe I would’ve Spicy Sweet Chicken & Veggie Recipe I would’ve never thought that carrots and radishes pair well when cooked together. This spicy sweet chicken and veggie recipe is a hit and has a kick to it when roasted with chicken, sriracha and honey. You should try it! Here’s the recipe: Ingredients * 3 tbsps Butter (melted) * 1 1/2 tbsps Honey * 1 1/2 tsps Sriracha * 1 tbsp Lime Juice * 1 lb Chicken Breast (boneless, skinless) * 10 Heirloom Carrots (sliced into rounds) * 3 cups Radishes (trimmed, halved or quartered) * Sea Salt & Black Pepper (to taste) * 1 stalk Green Onion (optional, garnish) Directions: * Preheat the oven to 425ºF (215ºC). * In a small bowl, stir together the butter, honey, sriracha, and lime juice.Add the chicken to a large baking dish and scatter the carrots and radish around the chicken. * Drizzle the butter mixture over everything and toss well to combine. Season with salt and pepper.Place in the oven and bake for 22 to 25 minutes, or until the chicken is cooked through and the veggies are tender. Top with green onion, divide evenly between plates, and enjoy! My Turkey & Blueberry Breakfast Sausage Patties My Turkey & Blueberry Breakfast Sausage Patties These turkey and blueberry breakfast sausage patties are so easy to make! They are so delicious with the fresh garlic, ginger, blueberries and coconut oil added, it’s a nice combo of savory and sweet. These are great for “grab and go” when made ahead. You can use these for breakfast or for dinner with a side of sweet potatoes and roasted vegetables. They are really great! RECIPE MAKES 4 INGREDIENTS: * 1 lb Extra Lean Ground Turkey * 1 Garlic (clove, minced) * 1 tbsp Italian Seasoning * 1 tsp Ginger (peeled and minced) * 3/4 tsp Sea Salt * 1/2 cup Blueberries * 1 tbsp Coconut Oil DIRECTIONS: * In a large mixing bowl combine the turkey, garlic, Italian seasoning, ginger and salt. Mix until combined. Gently fold in the blueberries. Form the meat mixture into thin, even patties, about 4-inches in diameter. * Heat the coconut oil in a large frying pan over medium-high heat. Cook the sausage patties for 4 to 5 minutes per side until cooked through. Serve and enjoy! My easy and quick Southwest Turkey Meatballs recip My easy and quick Southwest Turkey Meatballs recipe is combined with a colorful blend of black beans, corn, tomatoes, lime and cilantro making it a complete hearty meal. This complete meal takes only 20-minutes to make and your family will be happy you made it. TAKES 20 MINUTES SERVES 4 11 INGREDIENTS: * 1 lbExtra Lean Ground Turkey * 1/4 tsp Sea Salt * 1/4 tsp Black Pepper (grated and drained of excess water) * 2 tsps Extra Virgin Olive Oil * 1 cup Frozen Corn (white or yellow) * 2 cups Black Beans (can) * 2 cups Cherry Tomatoes (Diced) * 1/2 cup Chicken Broth (to taste) * 1 tbsp Lime Juice * 1 tsp Cumin * 1/4 cup Cilantro DIRECTIONS: * In a large bowl, combine turkey, salt and pepper and mix well. Shape into 16 meatballs, each about the size of a golf ball. Optional: Spray meatballs with avocado cooking spray. * In a large skillet, heat oil on medium-high. Add meatballs and cook for 3 to 5 minutes, turning frequently, until browned on all sides. Add corn, beans, tomatoes, broth, lime juice and cumin and mix well. Reduce heat to medium, partially cover and cook for an additional 3 to 5 minutes, until meatballs are cooked through. Stir in cilantro and serve. * Divide onto plates and enjoy!
