My great nephew, Porter turns six years old today! My great nephew, Porter turns six years old today!! He is definitely a dietitian’s dream kid! Believe it or not, this little boy is obsessed with growing vegetables and eating them too!! He actually became intrigued with gardening by working side by side  with his  grandmother, Mo (my sister Mona)in her garden. 

I applaud my sister Mona, for taking the time to teach  her grandson all about growing vegetables. This makes my heart smile.  My father was a farmer, therefore we grew up working in the garden and eating fresh, home grown vegetables at every meal. 
Healthy eating starts at home. 
Diet is one of the most important factors for health in children. Not only can a healthy diet give kids the proper nutrition that they need for development, but it can also give them healthy habits that they can keep with them throughout their lives. 

Vegetables are high in vitamins, minerals and fiber.  Kids should be encouraged to eat a variety of vegetables and fruits. 

Teach your children at an early age to have a rainbow of colors on their plate.  Though, keep in mind, its best not to force your child to eat their vegetables. Being forceful only helps them develop a negative relationship with those foods. Instead, keep offering them up and mixing them with foods they like until they eventually start to eat more of them.

Patty’s Super Chopped Salad Recipe Ingredients Patty’s Super Chopped  Salad Recipe

Ingredients:
* 8 cups Mixed Greens (chopped)
* 1/2 cup Cherry Tomatoes (chopped)
* 1/2 cup Goat Cheese (chopped)
* 1/4 cup Red Onion (chopped)
* 2 1/2 tbsps Extra Virgin Olive Oil
* 2 1/2 tbsps Balsamic Vinegar
* 2 tbsps Dried Unsweetened Cranberries (chopped)
* 1/2 cup Grated Carrot (shredded)
* 2 tbsps Pecans (Chopped)
* 1/4 Sea Salt & Black Pepper

DIRECTIONS:

* Add chopped mixed greens, chopped tomatoes, chopped red onions, chopped carrots, chopped pecans and chopped goat cheese to a large mixing bowl.

* Toss with Extra Virgin Olive Oil and Balsamic Vinegar. Season liberally with sea salt and black pepper to taste. Enjoy!

✨Don’t go to the party hungry

Rule #1, It’s never good to go to any place hungry, much less to a party.   If you think you are doing well showing up to a party on an empty stomach, so that you can happily devour everything in sight, think again.   Instead, consider having a small, healthy snack that combines both fiber and protein to keep you feeling full rather than going to a party completely ravenous.  

✨Be selective and apply the 3 bite rule
I don’t normally crave or eat too many sweets, but the holidays bring out my sugar tooth.  I know I shouldn’t eat a whole dessert, so in this situation, I apply this rule: 3 bites, and 3 bites only, of your favorite dessert. Studies show that people rate the first and last bites as the best. Three bites give you a first, middle, and last, which is all you need to appreciate a dessert completely.  

✨Sneak in exercise whenever you can during the holidays

If my social calendar gets really busy and I can’t fit in my usual gym workout, I don’t cancel working out completely. I still try to do some form of exercise, whether it’s cardio, strength training, resistance, or stretching for at least 30 minutes per day. I try to fit in mini workouts consisting of squats, lunges, push-ups and planks to build lean muscle and to keep my metabolism revved up. 

✨Minimize the high calorie drinks, and keep them light 

If you find yourself drinking too much during holiday parties, you may want to pay attention to what you are drinking because special holiday drinks are not always waistline-friendly.   For example, a glass of eggnog has over 300 calories, which is equivalent to eating a bowl of ice cream.

The Perfect Holiday Appetizer: Bacon Wrapped Goat The Perfect Holiday Appetizer: Bacon Wrapped Goat Cheese Dates
You can make these bacon wrapped goat cheese dates in no time and they are so delicious.

Here’s the recipe:
Makes 4 Servings

INGREDIENTS:
* 1 cup Pitted Dates
* 6 slices Bacon (cut in half)
* 2-4 ozs Goat Cheese
* 1 tbsp Balsamic Vinegar

DIRECTIONS:

* Preheat the oven to 450°F. Line a baking sheet with parchment paper.

* Slice open dates, remove the pits, and stuff with 1/2 -1 teaspoon of goat cheese. Cut the bacon in half, so you have 12 pieces total. Wrap each date with a half slice of bacon and push a toothpick through it. Place the bacon wrapped dates on the parchment lined baking sheet.

* Bake for 14-17 minutes, flipping 2-3 times until the bacon is evenly browned or until desired crispiness.

* Remove from oven, drizzle with the balsamic vinegar (optional), allow to cool before eating and enjoy!

* Carbs: 29g
