Creamy Coconut Lime Chicken

Savor the vibrant flavors of this Creamy Coconut Lime Chicken! Juicy chicken breasts are seared to perfection in extra virgin olive oil, then simmered in a rich, creamy sauce made from coconut milk and fresh lime juice, with a hint of spice from chili flakes. The dish is finished with fragrant garlic and garnished with a burst of cilantro for a fresh, zesty finish. This simple yet flavorful dish offers a tropical twist that’s sure to elevate your dinner table. Enjoy it with a side of your favorite vegetables or rice for a complete meal!

Ingredients:

  • 2 tsps Extra Virgin Olive Oil
  • 1 1/4 lbs Chicken Breast (boneless, skinless)
  • Sea Salt & Black Pepper (to taste)
  • 4 Garlic (clove, sliced)
  • 1 tsp Chili Flakes
  • 1 1/2 cups Canned Coconut Milk
  • 2 Lime (juiced, plus more for garnish)
  • 1/2 cup Cilantro

Directions:

  1. Heat the oil in a pan over medium heat. Season the chicken all over with salt and pepper. Add the chicken to the pan and cook for two to three minutes on each side or until browned.
  2. Add the garlic, chili flakes, and coconut milk. Bring to a simmer, cover the pan with a lid, and simmer over medium-low heat for about 10 minutes.
  3. Remove the lid and stir in the lime juice. Turn the heat to medium-high and boil for about two to three minutes or until the sauce has slightly thickened. Taste and adjust the seasoning to your taste.
  4. Top with cilantro. Garnish with lime slices, and enjoy!
