Ingredients:
- 4 Red Bell Pepper (large, cut into thick slices)
- Sea Salt & Black Pepper (to taste)
- 1 lb Extra Lean Ground Turkey
- 1Yellow Onion (small, diced)
- 2 tbsps Taco Seasoning
- 2 ozs Cheddar Cheese (grated)
- 1/2 cup Cilantro (chopped)
- 1 cup Salsa
- 1 cup Guacamole
- 1Lime (cut into wedges)
Directions:
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Add the sliced bell pepper to the baking sheet and season with salt and pepper. Place it in the oven and cook for 10 minutes.
- While the peppers are in the oven, heat a pan over medium heat. Add the ground beef, breaking it up as it cooks. Add the onion and taco seasoning and cook for eight to 10 minutes or until the beef is browned and cooked.
- Spread the cooked ground beef and onion evenly over the peppers. Top with cheese and return to the oven for five to ten minutes or until the cheese has melted.
- Top with cilantro, then divide the nachos, salsa, guacamole, and lime wedges evenly onto plates. Enjoy!
