Brunchy Sweet Potatoes

Ingredients:

  • 4 Sweet Potato (large, cubed)
  • 2 tbsps Avocado Oil
  • 1 tsp Sea Salt (to taste)
  • 2 tbsps Thyme
  • 1 tbsp Butter
  • 1/4 cup Goat Cheese
  • 2 tsp Hot Honey
  • 1 tbsp Parsley
  • 1 tbsp Balsamic Glaze

Directions:

  • Par-boil sweet potatoes for 20 minutes with salt and fresh thyme. Cool, then cut potatoes into cubes.
  • Preheat oven to 400°F (205°C). Toss the par- boiled diced sweet potatoes with the oil until well coated. Add to baking pan lined with parchment paper and bake for 30 minutes, or until desired crispiness, tossing halfway through. Optional: Sprinkle butter and add fresh thyme.
  • Place cooked sweet potatoes in serving dish, garish with parsley, hot honey, balsamic glaze and goat cheese.
