Preparation Time: 45 Minutes
Ingredients:
5 Chicken Breast, Boiled & Diced
2 Medium Onions Chopped
2 Cup of Bell Peppers (Tri-Colored) Diced
2 Cup of Fresh Mushrooms Chopped
2 Cans of Cream of Mushroom Soup
64 oz of Chicken Broth
2 Cup of Half & Half (To reduce the fat content, you can substitute with Fat Free Half & Half)
4 Tsp of Fajita Seasoning
4 Tablespoons of Butter
8 oz of Shredded Mexican Cheese
Optional: Toppings: Fresh Jalapenos, Avocados, Tortilla Chips
Directions:
Melt Onions in Butter, add Peppers and Mushrooms and saute’ until soft.
Add Diced Chicken and 2 teaspoons of Fajita Seasoning and saute’ briefly
Add Cream of Mushroom Soup, Chicken Broth, Half & Half, Shredded Mexican Cheese
Add Two more teaspoons of Fajita Seasoning to Taste
Bring to a boil, then reduce heat and simmer for 30 minutes
Add Fresh Jalapenos, Avocados, Tortilla Chips as Desired
