Pumpkin Spice Energy Bites

These nourishing, no-bake energy bites taste like a bite-sized pumpkin pie — but with a wholesome twist! Made with real, whole ingredients like Medjool dates, walnuts, oats, almond flour, and pumpkin purée, they’re naturally sweet, rich in fiber, and filled with healthy fats to keep energy levels steady.

A touch of warm spices — cinnamon, nutmeg, ginger, and allspice — makes them perfectly cozy, while the orange-zest coconut glaze adds a refreshing hint of brightness. Ideal for a grab-and-go breakfast bite, a pre-workout snack, or a satisfying afternoon treat.

Takes ~60 minutes to make and makes ~20 servings

Ingredients:

  • 1 ½ Cups Pitted Dates (~17 Medjool Dates)
  • 1 ½ Cups Walnuts
  • 3/4 Cup Rolled Oats (certified gluten-free as needed)
  • 1/2 Cup Almond Flour
  • 2 Tbsp Pumpkin Purée
  • 1 ¾ Tsp Cinnamon
  • 1 ½ Tsp Vanilla Extract
  • 3/4 Tsp Nutmeg, 1/2 Tsp Ginger, and 1/2 Tsp Allspice or 2 Tsp of Pumpkin Spice
  • 1/4 Tsp Sea Salt

Glaze:

  • 3 Tbsp Coconut Butter or 3 Tbsp Coconut Oil + 3 Tbsp Powdered Sugar
  • 2 Tsp Orange Zest (about 1/2 an orange, zested)

Instructions:

  • 1. Add the walnuts and oats to a food processor and pulse until they are flour like. 
  • 2. Add the remaining ingredients to the food processor and process until evenly mixed and formed into a dough.
  • 3. Scoop out 1 ½ Tbsp amounts and roll into balls. Repeat until all the dough is used. For best results place the bites on a parchment-lined baking sheet or plate and refrigerate to chill for at least 30 minutes (or 15 in the freezer).
  • 4. GLAZE:  Use a double boiler to melt the coconut butter for approximately 2 minutes.  Or mix together the coconut oil and powdered sugar.  Dunk each bite into the glaze after they have been chilled and then sprinkle the bites with the orange zest.
