    This fresh and colorful chopped salad is a plethor This fresh and colorful chopped salad is a plethora of all my favorite fresh vegetables and fruits.  You can add in these ingredients or make it your own and add the healthy stuff you like. 

💚Simply tossed together chopped mixed greens, chopped tomatoes, chopped red onions, chopped carrots, chopped pecans and chopped goat cheese in a large mixing bowl. 

💛Toss with Extra Virgin Olive Oil and Balsamic Vinegar. Season liberally with sea salt and black pepper to taste. Enjoy! 

❤️You can top this salad with a portion of grilled or roasted lean protein source to take it from a simple side to a quick main dish.

    Thanks to my very convincing adventurous, friend, Thanks to my very convincing adventurous, friend, Kelly, I said YES, to something I was really afraid to do. They say it’s actually good to say yes to something that frightens you, so that’s exactly what I did. 

My YES was  to go on a 4 -day, 30 mile paddleboard/camping trip in Nevada/Arizona.  The paddle-boarding part of the trip didn’t scare me.  Although, it turned out to be brutal, paddling up-stream ~15 miles to the Hoover dam.  It wasn’t the same leisurely paddle boarding I’ve done in Kemah and in Austin, Tx.  However, I would’ve never dreamt that it was going to so serene and beautiful. 

As far as the camping part of the trip, I felt like a fish out of water. Cowboy camping is not for sissies, it’s simply sleeping without shelter beneath the stars and watching a freak show of  all kinds of creatures roaming around in the night. 

The trip was a real game changer, I survived! I didn’t starve and I met eleven of the nicest people, which made the trip extra special. 

Some of the trip take aways:
- [x] Do something that scares the sh*t out you. 😳
- [x] Be honest, if you don’t have your drivers license because a raccoon stole your wallet, tell the Hoover dam security guards the truth. That’s what Tim did. 🤣
- [x] Be prepared and fully equipped for a camping trip adventure.

October and fall weather! 

I know what it’s like, having access to fresh homegrown vegetables every season, since my dad was a farmer.  My sisters and I had no choice but to eat theses straight out the ground foods at every meal. It was hard work to grow vegetables, but my sisters and I, still to this day, appreciate the value of eating home grown vegetables all year round. 

In reality, most people are not able to plant a garden. Though, there's good news, we have several farmer's markets and grocery stores that sell local and organic produce (HEB, Krogers, Whole Foods & Sprouts).

It's better to buy your fruits and vegetables in season as the produce full of antioxidants and immune-boosting benefits to prepare our bodies for the colder months.

Here is a list of the produce this season!
